Udang Bakar Madu (Roasted Honey Shrimp)

Ingredients:

  • 500 gr fresh shrimp (peeled and deveined, if desired)
  • 5 tbs vegetable oil
  • 2 tsp garlic powder
  • 1 tbs grated ginger
  • 1 tsp ground pepper
  • 1 tsp honey
  • 4 tsp tomato sauce
  • 1 tsp chili sauce
  • 1 tsp salty soy sauce
  • 1 tsp kaffir lime juice
  • 1 tsp cornstarch
  • 1 cup water
  • salt to taste

Directions:

  • In a bowl, mix 2 tbs vegetable oil with salt and lime juice. Brush shrimp with the oil to marinate. Set aside for 10 minutes.
  • Preheat the oven to 325F (160C). Roast the shrimp until fine. Remove and set aside.
  • Stir-fry garlic and ginger powder with remaining vegetable oil until fragrant. Add sugar, salt, pepper, honey, tomato sauce, chili sauce, soy sauce, and lime juice. Remove.
  • Dip the shrimp in the sauce mixture. Roast briefly in the oven. Remove.
  • Add cornstarch and water to the remaining sauce mixture. Heat in a saucepan, stir to mix until the sauce blends well.
  • Serve shrimp with the sauce.
