Sop Buntut Goreng (Fried Oxtail Soup)

Ingredients:

Soup:

  • 500 gr oxtail, cut into joints
  • 2 cm ginger, smashed
  • 3 cloves
  • 1 nutmeg, finely crushed
  • 1 tsp ground pepper
  • 2 potatoes, diced
  • 1 carrot, diced
  • 2 onion leaves, minced
  • 1 celery leaf, sliced
  • 1 tomato, thinly sliced
  • 3 cloves garlic, bruised
  • 1 cup vegetable oil for frying
  • 1 tbs fried shallots
  • nut crackers

Sauce for fried oxtail:

  • 2 cloves garlic, crushed
  • 2 tbs oyster sauce
  • 1 tbs plain soy sauce (kecap inggris)
  • 3 tbs sweet soy sauce

Directions:

  • Put oxtail in a pressure cooker, add 1 liter of water, cover and cook to a boil for about 15-20 minutes. Take out and dry up.
  • Boil again the oxtail in a regular pan with 1 liter water. Add potatoes, carrots, ginger, cloves and nutmeg until the vegetable is tender. Add sliced tomato, celery leaf, and onion leaves. Continue cooking for another 3-4 minutes.
  • Take out the oxtail from the soup and dry up. Set aside the soup in a serving bowl.
  • Prepare sauce: in a mixing bowl, combine garlic with all sauces. Marinate the oxtail with combined sauce for 10 minutes.
  • Fry oxtail in a shallow wok or frying pan over low heat until brown.
  • Take out and put in a plate.
  • Garnish with fried shallots and nut crackers. Serve with the soup.
