Sayur Labu Pedas (Hot Chayene Soup)
Ingredients:
- 1 chayote, cut into julienne strips
- 10 long green beans, cut into 3 cm lenghts
- 50 gr young jackfruit, diced
- 400 ml coconut milk
- 1 lemon grass, bruished
- sugar or coconut candy to taste
Spice Paste Ingredients:
- 3 shallots
- 3 cloves garlic
- 6 red chilies (reduce/add as desired)
- 3 cm ginger
- 3 cm galangal
- 2 cm turmeric
- 5 candle nuts.
- Salt to taste
Directions:
- Grind spice paste ingredients with a spice grinder or pestle and mortar to a fine powder
- Saute the spice in a frying pan until fragrant. Remove and set aside.
- Pour coconut milk into a saucepan. Add fried spice and lemon grass. Cook over medium heat to a boil.
- Add jackfruit. Keep cooking until some of the liquid evaporates and the jackfruit is half done.
- Add chayote and green beans. Stir to combine.
- Add sugar. Keep cooking and stirring until all finely done.
- Serve in a bowl (Better served with rice dumpling, either ketupat or lontong)
