Sayur Labu Pedas (Hot Chayene Soup)

Ingredients:

  • 1 chayote, cut into julienne strips
  • 10 long green beans, cut into 3 cm lenghts
  • 50 gr young jackfruit, diced
  • 400 ml coconut milk
  • 1 lemon grass, bruished
  • sugar or coconut candy to taste

Spice Paste Ingredients:

  • 3 shallots
  • 3 cloves garlic
  • 6 red chilies (reduce/add as desired)
  • 3 cm ginger
  • 3 cm galangal
  • 2 cm turmeric
  • 5 candle nuts.
  • Salt to taste

Directions:

  • Grind spice paste ingredients with a spice grinder or pestle and mortar to a fine powder
  • Saute the spice in a frying pan until fragrant. Remove and set aside.
  • Pour coconut milk into a saucepan.  Add fried spice and lemon grass. Cook over medium heat to a boil.
  • Add jackfruit.  Keep cooking until some of the liquid evaporates and the jackfruit is half done.
  • Add chayote and green beans. Stir to combine.
  • Add sugar. Keep cooking and stirring until all finely done.
  • Serve in a bowl (Better served with rice dumpling, either ketupat or lontong)
