Pepes Ayam (Minced Chicken Parcel)

Ingredients:

  • 300 gr chicken
  • 1 indian bay leaf
  • 5 sweet basil leaves (daun kemangi)
  • 1 lemon grass, outer leaves discarded and thinly sliced
  • 6 red chilies, de-seeded and sliced lenght-wise
  • 1 cup thick coconut milk
  • 1 tbs vegetable oil
  • Banana leaves or aluminum foil to wrap

Spice paste ingredients:

  • 6 shallots
  • 4 cloves garlic
  • 3 candle nuts
  • 1 cm ginger
  • 1 cm galangal
  • 1 tomato
  • 1 tsp sugar
  • 1 tsp salt

Directions:

  • Chop the chicken into small dices.
  • Grind spice paste ingredients into a smooth paste. Stir-fry in a wok until fragrant. Add the indian bay leaf, basil leaves, chilies and lemon grass. Continue stir-frying for another 2-3 minutes.
  • Add minced chicken and coconut milk. Continue cooking until the liquid is gone but the chicken stay moist. Remove from the heat.
  • Put chicken mixture on a square of banana leaf or aluminum foil. Roll it neatly to make a sausage shape, transfer it to a preheated oven at 200C. Roast for 10 minutes. Alternatively, steam in a steamer for half an hour.
  • Serve immediately.
