Jawa Mee

Ingredients:

  • 300 gr dry egg noodles
  • 1/2 whole chicken
  • 1 cup sliced cabbage
  • 1 tomato, cut into 8 sections
  • 1 scallion, thinly sliced
  • 3 tbs vegetable oil
  • 1 leaf Chinese cabbage (choy sum)

Spice Paste Ingredients:

  • 3/4 tsp coriander
  • 3 garlic cloves
  • salt to taste

Directions

  • Soak dry noodles in hot water for 10 minutes or until tender. Dry up.
  • Cook chicken in 500 ml boiling water for 20 minutes. Set aside 150 ml of the broth.
  • Remove bones from the chicken. Shred the meat into small thin pieces. Set aside.
  • Grind the spice paste ingredients in a mortar or blender. Saute in a wok with the vegetable oil until fragrant. Add chicken broth, noodles and shredded chicken while constantly stirring.
  • Add cabbage, tomato and scallion. Simmer and stir frequently until the vegetables are soft. Don’t overcook.
  • Put in a bowl, garnish with Chinese cabbage and fried shallots (if desired). Serve with acar (pickles)? and sambal.
