Jawa Mee
Ingredients:
- 300 gr dry egg noodles
- 1/2 whole chicken
- 1 cup sliced cabbage
- 1 tomato, cut into 8 sections
- 1 scallion, thinly sliced
- 3 tbs vegetable oil
- 1 leaf Chinese cabbage (choy sum)
Spice Paste Ingredients:
- 3/4 tsp coriander
- 3 garlic cloves
- salt to taste
Directions
- Soak dry noodles in hot water for 10 minutes or until tender. Dry up.
- Cook chicken in 500 ml boiling water for 20 minutes. Set aside 150 ml of the broth.
- Remove bones from the chicken. Shred the meat into small thin pieces. Set aside.
- Grind the spice paste ingredients in a mortar or blender. Saute in a wok with the vegetable oil until fragrant. Add chicken broth, noodles and shredded chicken while constantly stirring.
- Add cabbage, tomato and scallion. Simmer and stir frequently until the vegetables are soft. Don’t overcook.
- Put in a bowl, garnish with Chinese cabbage and fried shallots (if desired). Serve with acar (pickles)? and sambal.
