Kambing Guling (Grilled Whole Lamb)

Ingredients:

  • 1 whole young lamb, remove its head, legs, skins and intestines.

Spice Paste Ingredients:

  • 1/4 kg roasted coriander, finely ground
  • 1 tsp nutmeg powder
  • 1 sdm ground pepper
  • 1/4 kg garlic powder
  • 2 tbs salt
  • 1 botle sweet soy sauce
  • 150 gr coconut candy
  • 100 ml vegetable oil
  • 250 ml plain soy sauce

Sauce Ingredients :

  • 1/2 bottle sweet soy sauce
  • 200 gr shallot, thinly sliced
  • 1/2 kg tomatoes, minced
  • 1/4 kg bird’eye chilies, minced
  • 2 tbs fragrant lime juice
  • 30 kaffir lime leaves, minced

Directions:

  • In a large mixing bowl, combine all spice paste ingredients. Stir through until well mixed.
  • Marinate all parts of the lamb with the spice paste. Set aside for one hour.
  • Put lamb onto a stick. Grill it over charcoal fire from a distance of approx 40 cm. Rotate frequently to ensure all parts of the lamb are adequately exposed to the heat.
  • Keep brushing the lamb with the remaining spice paste and continue grilling until the meat is finely done.
  • With a knife, slice the meat in big chunks from the stick. Use a cutting board to divide the chunks into smaller servings.
  • Prepare the sauce by combining all sauce ingredients in a mixing bowl.
  • Serve the meat with the sauce.
