Ayam Betutu (Balinese Roasted Chicken)

Betutu is a very popular Balinese dish. Versions of betutu include duck (bebek) or chicken. Here, we are going to prepare the chicken version of the dish that is stuffed with cassava leaves.

Ingredients:

  • medium sized whole chicken
  • 100 gr cassava leaves, steamed, pressed to remove its bitter juice and cut
  • 5 tbs vegetable oil
  • banana leaves/aluminum foil, to wrap
  • 2 cm lemon grass, minced

Spice paste ingredients:

  • 7 red chilies
  • 5 candle nuts
  • 10 shallots
  • 1 tsp belachan
  • 5 cloves garlic
  • 1 tbs coriander seeds
  • 2 pepper seeds
  • 1 cm galangal
  • ? tsp nutmeg
  • 2 tsp turmeric
  • salt and sugar to taste

Directions:

  • Grind spice paste ingredients in a spice grinder or mortar and pestle into a fine paste.
  • Saute the spice paste and minced lemon grass until fragrant. Remove and let it cool. Divide into two portions.
  • Blend one portion of sauteed spices with cassava leaves. Stuff the cassave leave mixture into the chicken cavity. Close the cavity and stitch the openings with toothpicks.
  • Rub the chicken thoroughly with the remaining spices. Wrap it with banana leaves or aluminum foil. Secure wrappings with ties.
  • Steam the wrapped chicken in a steamer for 45 minutes.
  • Preheat oven. Roast chicken in the oven on 180 C for 30 minutes.
  • Remove. Cut into quarters and serve.
