Ikan Bakar Kuning (Yellow Grilled Fish)

Ingredients:

  • 500 gr fish
  • 150 ml coconut milk
  • 2 tbs lime juice
  • 1 lemon grass, smashed
  • 1 tbs coconut candy
  • salt taste

Spice paste ingredients:

  • 4 shallots
  • 2 cloves garlic
  • 3 red chilies
  • 2 cm ginger
  • 1.5 cm turmeric

Directions:

  • Wash the fish using fresh tap water. Rinse off any blood or slime on the fish and pat dry it with paper towels.
  • Grind spice paste ingredients with a pestle and mortar or spice grinder
  • In a skillet, combine spice paste with coconut milk. Add lime juice, lemon grass, coconut candy and salt. Whisk gently.
  • Put the fish in the seasoned coconut milk, flip it over a couple of times to spread the juice. Set aside for 15 minutes.
  • Heat the coconut milk and fish over medium heat until the milk comes to a boil. Don’t overcook.
  • Grill the fish. Flip it ver and brush with the coconut milk several times until thoroughly done.
  • Serve with chili sauce and raw vegetables.
