Ikan Bakar Kuning (Yellow Grilled Fish)
Ingredients:
- 500 gr fish
- 150 ml coconut milk
- 2 tbs lime juice
- 1 lemon grass, smashed
- 1 tbs coconut candy
- salt taste
Spice paste ingredients:
- 4 shallots
- 2 cloves garlic
- 3 red chilies
- 2 cm ginger
- 1.5 cm turmeric
Directions:
- Wash the fish using fresh tap water. Rinse off any blood or slime on the fish and pat dry it with paper towels.
- Grind spice paste ingredients with a pestle and mortar or spice grinder
- In a skillet, combine spice paste with coconut milk. Add lime juice, lemon grass, coconut candy and salt. Whisk gently.
- Put the fish in the seasoned coconut milk, flip it over a couple of times to spread the juice. Set aside for 15 minutes.
- Heat the coconut milk and fish over medium heat until the milk comes to a boil. Don’t overcook.
- Grill the fish. Flip it ver and brush with the coconut milk several times until thoroughly done.
- Serve with chili sauce and raw vegetables.
