Rujak Mi Palembang (Spicy Sauced Noodles)
Ingredients:
- 150 gr noodles, soaked in hot water and drained
- 35 gr vermicelli, soaked in hot water and drained
- 200 gr cucumber, sliced
- 100 gr bean sprouts, soaked in hot water and drained
- 1 tbs fried shallots
- 250 gr coconut candy
- 750 ml water
- 2 tbs vinegar
Spice paste ingredients:
- 3 cloves garlic
- 10 shallots
- 10 red chilies
- 1 tsp salt
Directions:
- Grind spice paste ingredients in a spice grinder or mortar and pestle into a fine paste.
- Boil water and add coconut candy. Stir to dissolve. Add vinegar and spice paste. Simmer for a few minutes. Remove from heat.
- Put noodles, vermicelli, bean sprouts and cucumber slices in a bowl. Pour the sauce.
- Garnish with fried shallots and serve immediately.
