Nasi Goreng Spesial (Special Fried Rice)
Ingredients (Serves 2):
- 200g cooked long-grain white rice
- 100 g cooked chicken or small prawns, thinly sliced
- 3 shallots, peeled and thinly sliced
- 2 onions, peeled and finely shreded
- 1 garlic clove, trimmed and thinly sliced
- 2 chilli peppers, finely ground
- 1 carrot, finely diced
- 1 celery stick, trimmed, finely diced
- 1/2 cup finely shredded cabbage
- 1 tbs sweet soy sauce (kecap manis)
- 2 tbs vegetable oil
- 2 eggs
- 1/2 teaspoon dried shrimp paste
- salt
- tomato (to garnish)
- cucumber (to garnish)
- shrimp crackers
Directions:
- Stir the cooked rice with a fork to separate the grains.
- Pour 1 tbs of vegetable oil in a wok, then beat and fry the eggs together. Cook until firm to make an omelette. Place the omelette on a plate, cool and cut into long strips.
- Heat the remaining 1 tbs of oil in the wok. Stir-fry the shallots, garlic, chilly peppers and shrimp paste until tender. Add sliced chicken fillets or prawns, celery stick, garlic clove and cabbage to the dish, stir-fry until cooked through (approx 3- 5 minutes).
- Increase the heat to high and add the rice, salt and soy sauce, stirring constantly until well mixed and heated through (approx 5-10 minutes)
- Garnish with omelette strips, cucumber, carrot and tomato.
