Terong Kecap Manis (Sweet Soy Sauced Aubergine)

What is the difference between aubergine and eggplant? They are the same. Aubergine is a British English word for Indonesian “terong”. Americans and Canadians may prefer to call them eggplants. Both words refer to the raw material of the delicious dish we are going to prepare here :-)

Ingredients:

  • 300 gr aubergine, cut into halves
  • 2 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 tomato, sliced
  • 3 red chilies, sliced
  • 1/2 cup kecap manis (sweet soy sauce)
  • 1/2 tsp ground black pepper
  • 2 tbs vegetable oil
  • 1/2 tsp salt (or to taste)

Directions:

  • Steam the aubergine for 20 minutes or until tender.
  • Preheat oil in a wok. Stir fry the garlic and onion until fragrant.
  • Add tomato, chilies, black pepper, salt and kecap manis while continue stirring. Add the steamed aubergine. Stir to combine. Continue cooking for a few minutes.
  • Remove and serve.
