Ayam Bakar Gantari

Ayam Bakar Gantari or Ganthari is a famous indonesian grilled chicken, popularized by a street-side restaurant that is located between Jl. Bulungan and Jl. Mahakam, Blok M, Jakarta. Here’s their well-guarded secret recipe (as you will notice, the presence of cardamom and cinnamon in the seasoning is what makes it unique. You won’t find them in any other variants of indonesian grilled chicken) :
Ingredients:
- 1 whole chicken, cut into quarters
- 2 stalks lemon grass, bruised
- 2 kaffir lime leaves
- 3 indian bay leaves
- 3 tbs margarine
- 5 tbs sweet soy sauce
- 1 ltr water
Spice paste ingredients:
- 5 cloves garlic
- 6 shallots
- 1 tbs coriander
- 1 tbs cumin
- 1 tsp ground white pepper
- 1 tsp ground cardamom
- 3 cm galangal
- 3 cm ginger
- 2 candle nuts
- 5 cm turmeric
- 3 cm cinnamon
- 5 tbs coconut candy
- salt to taste
Directions:
- Grind spice paste ingredients into a smooth paste. Rub the chicken with the spice paste. Set aside and let it to marinate for one hour.
- Pour water into a pan, bring to the boil. Reduce heat to medium, add chicken and the spice paste. Add indian bay leaves and kaffir lime leaves. Whisk through and simmer until the liquid is almost gone and the chicken is tender. Remove.
- In a mixing bowl, combine margarine and soy sauce. Brush the chicken with the solution.
- Grill the chicken while ocassionally re-brushing with the solution until browned on both sides.
- Serve with sambal and vegetables
