Kangkung Belacan
Ingredients:
- 500 gr kangkung
- 6 shallots, thinly sliced
- 4 tbs vegetable oil
Spice Paste Ingredients:
- 8cloves garlic
- 6 small hot chilies
- 1 tsp belacan
- 1 tbs coconut candy
- 1/2 tsp salt
Directions:
- Grind spice paste ingredients using a blender or mortar and pestle into rough paste.
- Stir fry shallots in a wok until fragrant, add the rough spice paste. Stir for another 1-2 minutes until browned.
- Add kangkung, stir to combine. Reduce to low heat. Cover the wok until kangkung is tender.
- Put kangkung in a serving plate. Garnish with fried shallots, if desired.
