Rujak (Spicy Fruit Salad)

There are many variations of rujak, that differ both in terms of process and ingredients, including rujak bebek (coarsely ground fruits), rujak cingur (east javanese rujak that combines cooked vegetables with cow’s muzzle), rujak petai, etc. Here we will prepare the simplest one that combines under-ripe fruits such as pineapple, papaya, cucumber with a pungent sweet sour and spicy sauce.

Ingredients:

  • 2 cucumbers, peeled and sliced
  • 2 yam beans (bengkuang), peeled and sliced
  • 1/2 under-ripe papaya, peeled and sliced
  • 1 under-ripe pineapple, peeled and sliced

Spicy sauce:

  • 4 tbs dry-roasted peanuts
  • 1 tsp roasted or fried shrimp paste (belacan)
  • 1 tbs coconut candy
  • 3 bird’s eye chilies
  • 1 clove garlic
  • 3 tbs sweet soy sauce
  • 1 tsp tamarind juice/lime juice (optional)
  • salt to taste

Directions:

  • Grind chilies, garlic, coconut candy, salt, shrimp paste and peanuts into a coarse paste. Transfer to a bowl. Add sweet soy sauce and tamarind juice. Whisk to combine.
  • Serve on a plate with the bit sized fruits.
  • Enjoy the dish by dipping each of the fruit piece into the spicy sauce.
