Gado-Gado (Indonesian Mix Vegetables)

Ingredients:

  • 200 gr blanched/steamed vegetables
  • 100 gr long green beans, steamed, trimmed and cut into 4-5 cm long
  • 50 gr steamed cabbage, shredded
  • 50 gr bean sprouts
  • 50 gr lettuce
  • 2 steamed carrots?julienned
  • 2 steamed tomatoes, wedged
  • 1 cucumber, sliced
  • 2 boiled/steamed potatoes, peeled and cubed
  • 1 hard boiled eggs, wedged
  • 1 fried/baked tempe, sliced
  • 1 fried/baked tofu, sliced
  • 2 lontong (rice cake with log shape), cut into 1 cm thick
  • 1 tbs ready-to-use fried shallot
  • emping nuts/ shrimp crackers

Peanut sauce

  • 5 cloves garlic, stir fried/fried/roasted
  • 1 cup roasted/fried peanuts
  • 5 red chilies, discard the seed and stir fried/fried
  • 1/2 tsp belacan (dried shrimp paste), toasted
  • 1 tsp coconut sugar
  • 1 cup warm water or coconut milk (optional)
  • salt to taste

Directions:

  • Prepare the peanut sauce by grinding all sauce ingredients in a blender or using the traditional mortar and pestle. Put the sauce in a sauce pot. Add water if the sauce is too thick.
  • Place lettuce, slices of lontong, potatoes, vegetables, boiled egg, tempe and tofu, tomato, and cucumber. Pour sauce over, garnish with fried shallot,? shrimp/emping nuts crackers.
